Honey-Apple Pork Chops
11/2 cups apple cider
¼
cup lemon juice
¼
cup soy sauce
2 tablespoons honey
1 garlic clove, minced
¼
teaspoon pepper, ground
4 pork chops, about 1 inch thick
In a shallow dish, combine cider, lemon juice, soy sauce, honey, garlic and pepper. Add chops and turn a few times to coat with the marinade. Cover and refrigerate overnight, turning meat occasionally.
To cook: Prepare a grill with medium hot charcoal. Remove chops from marinade and cook roughly 6 inches above coals for 10-15 minutes, turning and basting with marinade frequently. Discard remaining marinade. Pork is done when it registers 160 on an internal thermometer.
Serves four.
