Honey BBQ "Wings"

6 tablespoons barbecue sauce, see note

3 tablespoons honey

½

teaspoon garlic powder

Salt and pepper, to taste

Olive-oil spray

24 chicken tenderloins (about 1½

pounds), trimmed

Combine the barbecue sauce and honey in a small bowl. Set aside.

Sprinkle the garlic powder, salt and pepper over the tenderloins, and toss to combine.

Place a large nonstick skillet over high heat. When it is piping hot, mist with the oil spray and add a chicken strip. If it sizzles, the pan is hot enough. Add more strips, side by side without crowding the pan. You can work in batches. Cook the strips until they are lightly browned on the outside and no longer pink inside, 2 to 3 minutes per side. Turn the heat to low, and return all the wings to the pan. Pour the reserved honey-BBQ mixture over them, and gently stir until they are well coated and the sauce is warm. Remove from the heat, and let sit for 5 minutes. Toss again, and serve.

Serves six.

Cook's note: Look for sauce with no more than 9 grams sugar and less than 1 gram fat per 1 tablespoon serving; Alexander uses Organicville brand.
