Sauteed Asparagus
2 teaspoons extra-virgin olive oil 1 pound pencil-thin asparagus, trimmed 2 teaspoons minced garlic Salt and pepper, to taste In a large skillet, heat the oil over medium heat. Add the asparagus and garlic, salt and pepper. Shake the skillet to distribute asparagus and garlic. Toss several times, and cook until bright green and slightly roasted on the edges, about 5 minutes. Serve immediately. Serves six. Cook's note: Recipe can easily be doubled for larger crowds. If your skillet is not large enough to accommodate 2 pounds of asparagus, cook in batches. Nutrition values per serving: 32.5 calories (39 percent from fat), 2 g fat (trace amount saturated), 3.5 g carbohydrates, 1.5 g fiber, 2 g protein, 0 cholesterol, 10 mg sodium.
