Paula's Fruit Soup a la Don
1 cantaloupe, seeds and rind removed, cut into chunks 1 cup fresh pineapple 1 cup canned peaches (in light syrup) 1 small Granny Smith apple, peeled, cored and diced 2 cups strawberries (if fresh, washed and trimmed) 6 tablespoons clover honey 1#189;cups water (bottled preferred) #189; cup orange juice (fresh-squeezed preferred)#188; cup lemon juice (fresh-squeezed preferred)#188; cup pineapple juice4 tablespoons reduced-fat sour cream, for garnish Orange rind, cut into thin strips for garnishPlace a large saucepan over medium heat; add and combine cantaloupe, pineapple, peaches, apple, strawberries, honey, water and the orange, lemon and pineapple juices. When the liquid comes to a boil, reduce the heat to low and gently simmer, uncovered, for 15 minutes or until fruit is soft, stirring occasionally.Allow fruit mixture to cool. When completely cool, ladle half of the fruit mixture into a blender; blend until smooth. Taste and, if necessary, whisk in a teaspoon or two of additional honey. Pour into a glass or other nonreactive bowl; repeat with the remaining mixture and chill until cold.
