Spinach and Three Cheese Filling
1 cup ricotta2 eggs10 ounces frozen chopped spinach, thawed#189; cup mozzarella1 tablespoon grated parmesan1 tablespoon grated Romano1/2 cup chopped parsleySalt and pepper to tasteHeat oven to 425 degrees.In a large bowl beat ricotta and eggs. Add spinach, mozzarella, parmesan, Romano cheeses and parsley and stir until well combined. Season with salt and pepper to taste.Fill and bake calzones as directed in dough instructions.Makes enough to fill eight calzones.
