Chocolate Chip Cheesecake Bars
2 logs (about 16 ounces each) refrigerated chocolate chip cookie dough
1 pound cream cheese
2 eggs
½
cup sugar
1 teaspoon vanilla
Heat oven to 375 degrees.
Slice one of the cookie dough logs into rounds and press pieces into the bottom of a 13-by-9-inch baking pan.
In a large bowl, beat together cream cheese, eggs, sugar and vanilla until soft and creamy. Pour over cookie dough. Slice remaining cookie dough log and crumble it over the cream cheese mixture. Bake 35-45 minutes. It may not look completely done, but it will settle as it cools. Cut into squares while still slightly warm. Refrigerate bars and serve cold.
Serves 32.
