Fried Green Tomatoes with Green Tomato and Pepper Relish

4 green tomatoes

Salt and pepper

¾

cup whole wheat flour

¾

cup corn meal

½

cup vegetable oil

2 teaspoons sugar

1 tablespoon chili powder

1 egg

¼

cup milk

Green tomato relish (see note)

Cut each tomato into 1/4-inch slices, place on a plate and sprinkle each side with salt and pepper.

In one bowl combine egg and milk; in a second combine flour, corn meal, sugar and chili powder.

Heat a thin layer of oil in a large skillet on medium heat, enough to evenly coat the bottom of the pan. Dip each tomato into the egg mixture, then dredge in the flour mixture. Fry on each side until golden brown, 2 to 3 minutes per side, then remove and drain on paper towels.

Top with a liberal dollop of relish and serve immediately.

Serves four as a side dish.

Cook's notes: I use Tom's Green Tomato and Pepper Relish from Whole Foods. This makes a great appetizer, side dish or garnish on a grilled chicken breast sandwich.
