Desperate Wedge Salad all the Way

8 thick slices already-cooked bacon

1 head iceberg lettuce

½

cup chopped tomato

2 hard-cooked eggs, chopped (see note)

Blue-cheese crumbles, optional garnish

Creamy blue-cheese dressing

½

cup reduced-fat sour cream

½

cup reduced-fat mayonnaise

½

cup (2 ounces) crumbled blue cheese

1 teaspoon Worcestershire sauce

2 tablespoons low-fat milk

⅛ teaspoon ground black pepper

For the dressing: In a small bowl, mix together all ingredients, breaking up any large pieces of blue cheese. Serve immediately, or refrigerate in an airtight container for up to one week. Makes about 1½

cups

For the salad: Crisp the bacon in the microwave according to package directions. Coarsely chop, and set aside.

Quarter and core lettuce, and place each wedge on a plate. Top each with dressing, tomatoes and chopped egg. Garnish with cheese crumbles, if desired. Serve immediately.
