Minestrone

2 tablespoons olive oil

1 medium onion, chopped

2 medium ribs celery, with leaves, chopped

cup basil leaves, chopped, tightly packed

¼

cup parsley, chopped, tightly packed

2 cloves garlic, chopped

3 Swiss chard leaves, chopped

2 cups plum tomatoes, cut in eighths

1 ½

cups cooked garbanzo beans

10 cups chicken stock or water

2 teaspoons salt

pound dry tortellini, uncooked

1 medium summer squash, sliced 1/4-inch thick

1 cup green beans, cut in 1-inch pieces

Grated parmesan, for garnish

Heat oil in stock pot and add onion, celery, basil, parsley, garlic and Swiss chard; cook until greens start to wilt. Cover and simmer 10 minutes.

Add tomatoes, garbanzos, chicken stock and salt; simmer 30 minutes. Add tortellini, squash and green beans; simmer 15 minutes. Serve hot, garnish with grated parmesan.

Serves eight to 10.
