Lemon Sage Marinade

1 tablespoon finely grated lemon zest

¼ cup fresh lemon juice

¼cup extra-virgin olive oil

3 tablespoons finely chopped fresh sage

2 tablespoons minced shallot

2 tablespoons whole-grain mustard

1 tablespoon finely chopped garlic

1 tablespoon freshly cracked black peppercorn

Combine all ingredients in a nonreactive bowl. Use for meat, poultry, seafood or vegetables.

Makes about 1 cup.
