Smoked Salmon Yogurt Cheese Spread

1 cup yogurt cheese

4 ounces smoked salmon, chopped fine

2 tablespoons minced red onion

2 tablespoons capers, drained and minced

1 tablespoon minced fresh dill

Ground black pepper

Stir the yogurt cheese, salmon, onion, capers and dill together in a serving bowl; season with pepper to taste. Cover with plastic wrap and refrigerate until the flavors meld, about 1 hour. Bring to room temperature and season with additional pepper as needed before serving.

Makes about 11/4 cups.

Cook's note: This is best served the day it's prepared.

Variation: For Cilantro Chipotle Yogurt Cheese Spread, combine 1 cup yogurt cheese with 2 tablespoons minced fresh cilantro, half a canned chipotle pepper in adobo sauce, 1 teaspoon adobo sauce, 1/2 teaspoon ground cumin and 1/8 teaspoon garlic powder in a serving bowl. Salt and pepper to taste.
