Baked Pears ith Herbed Goat Cheese

2 ½ ounces goat cheese

1 tablespoon mixed herbs, chopped, such as parsley, thyme and chives

2 tablespoons extra-virgin olive oil, plus more for drizzling

Kosher salt and freshly ground black pepper to taste

4 small pears, firm

4 slices bacon, cut in half crosswise

¾ tablespoon honey

Arugula or dandelion greens for garnish

Heat oven to 375 degrees.

Combine goat cheese, herbs and 2 tablespoons olive oil; season with salt and pepper. Halve the pears and scoop out seeds and cores. Stuff each half with about 1 tablespoon cheese. Wrap each with a slice of bacon and place on a baking sheet. Drizzle a bit of olive oil over the pears and season with salt and pepper. Bake until pears are tender and bacon is crisp, about 25-30 minutes.

Place pears on a platter, drizzle with honey and garnish with arugula.

Serves eight.
