Macadamia Pear Custard Squares

Crust

½ cup butter

⅓ cup sugar

¾ cup flour

¼ teaspoon vanilla extract

1 cup Macadamia nuts, finely chopped

Filling

8 ounces cream cheese

1 egg

½ cup sugar

½ teaspoon vanilla extract

1 can (29 ounces) pear halves in natural juices, drained

1-2 tablespoons cinnamon/sugar mixture to garnish, or to taste

Heat oven to 350 degrees. Grease an 8-by-8-inch pan.

For the crust: With an electric mixer, cream butter and sugar until well-combined. Beat in flour and vanilla. Stir in chopped nuts by hand. Press into prepared pan and bake 20 minutes or until lightly browned. Remove from oven and cool until barely warm.

Increase oven temperature to 375 degrees.

For the filling: With an electric mixer, beat cream cheese with egg, sugar and vanilla until creamy. Pour onto warm crust.

Slice pears and arrange evenly over filling; sprinkle with cinnamon/sugar to taste. Bake 25-30 minutes, until center is set but still soft. Cool and serve at room temperature. Refrigerate leftovers.

Serves nine.
