Tangy Lime Beef Roast

1 beef bottom round roast (about 3 pounds)

1/2 cup fresh lime juice

1/4 cup brown sugar

1/4 cup vegetable oil

2 tablespoons Worcestershire sauce

6 large cloves garlic, crushed

Combine lime juice, sugar, oil, Worcestershire and garlic in small bowl. Place beef and lime mixture in food-safe plastic bag; turn meat to coat. Close bag securely and marinate in refrigerator 6 hours or overnight; turning occasionally.

Heat oven to 350 degrees.

Remove meat from marinade; discard marinade. Place meat in a shallow roasting pan and cook 11/2 hours or until a thermometer inserted at the thickest part reaches 165 degrees.

Carve into thin slices. Season with salt and pepper, as desired.

Serves eight.
