Adobo Gravy

2 teaspoons canola oil

¼ small yellow onion, diced

3 whole chipotle peppers packed in adobo sauce, minced

¼ teaspoon fajita seasoning

1 cup water

Salt and ground black pepper, to taste

1 packet (.85 ounces) roasted turkey gravy mix

¼ cup plain Greek-style yogurt

In a medium saucepan, heat the oil over medium-high. Add the onion and saute for 1 minute. Add the peppers, fajita seasoning, water, salt, pepper and gravy mix. Mix well, then simmer, stirring constantly, for 5 minutes.

Remove the pan from the heat and whisk in the yogurt.

Serves six.
