Jerk Chicken Kabobs
Jerk Chicken Kabobs2 teaspoons Jamaican jerk seasoning 1/4 cup brown sugar, packed 1/4 cup lime juice 1/4 cup soy sauce2 tablespoons Worcestershire sauce2 teaspoons paprika2 cloves garlic 1/4 cup green onions1 piece (3 inches) fresh ginger, sliced1 jalapeno pepper, seeded2 pounds boneless, skinless chicken breast cut in 1-inch pieces1 pineapple, in 1-inch cubes1 red bell pepper, in 1-inch pieces1 large onion, in 1-inch piecesIn food processor place jerk seasoning, brown sugar, lime juice, soy sauce, Worcestershire sauce, paprika, cloves, onions, ginger and jalapeno. Process until smooth. Combine marinade and chicken in a 1-gallon plastic freezer bag and refrigerate for 2 hours. Prepare hot grill. Skewer chicken, onion, pepper and pineapple. Coat grill with cooking spray. Cook about 8 minutes or until chicken is done.Serves 8.
