Macadamia Nut Grouper

2 fresh grouper fillets, 12 ounces each1/2 cup soft cream cheese1/4 cup finely chopped macadamia nuts8 ounces white wineJuice of 1 lemon1 tablespoon butterSalt and pepperHeat oven to 350 degrees.Pat fillets dry with a paper towel and spread the cream cheese over them. Roll each fillet in chopped nuts; transfer to a baking dish and set aside.In a small bowl, mix wine, lemon juice and butter. Simmer over low heat until butter melts and blends with juice and wine. Add salt and pepper to taste.Drizzle wine and butter mixture over filets and bake until lightly brown, about 10-15 minutes. Pour remaining wine sauce mixture over baked filets. Serve with small roasted red potatoes.Serves two.Cook's note: Potatoes can be roasted in same wine and lemon juice, substituting olive oil for butter. Salt and pepper to taste.
