Sweet and Spicy Chicken Salad

1 whole rotisserie chicken, cooled to room temperature, skin and bones removed and discarded, cut into bite-size pieces1 red onion (Bermuda) medium onion, chopped fine2 celery ribs, strings removed and chopped fine 1/2 cup pickled jalapeño peppers, drained well and chopped fine2 cups green seedless grapes, rinsed, drained and quartered1 large red sweet pepper, trimmed, seeds and ribs removed, chopped fineDressing2 cups fat-free mayonnaise2 tablespoons lime juice 1/2 teaspoon fresh-ground black pepper4 packets artificial sweetener4 tablespoons chopped fresh cilantro leaves, optional garnishPut the chicken, onion, celery, jalapenos, grapes and red pepper in a large bowl; set aside.For the dressing: Add mayonnaise, lime juice, black pepper and sweetener to a large mixing bowl. Using a wire whisk, whisk dressing together until combined.Add salad ingredients to bowl and, using a large rubber spatula, fold and stir ingredients into dressing until well coated. Refrigerate until chilled or overnight. Taste and adjust seasoning.
