Kelly's Planked Lake Michigan Salmon

1 large (2 to 3 pounds) center-cut salmon fillet, skin on6 tablespoons unsalted butter 1/3 cup clover honey 1/3 cup brown sugar1 tablespoon lemon juice1 tablespoon orange juice1-2 teaspoons liquid smoke 1/2 teaspoon crushed red pepper flakesSoak six to nine wood planks (cedar, apple, or other hard wood) in water for 2-4 hours.Place salmon in glass dish.In small saucepan combine butter, honey, brown sugar, lemon juice, orange juice, liquid smoke and red pepper flakes. Cook over medium heat, stirring until smooth, about 5-8 minutes. Cool. Pour marinade over salmon. Let set for 45 minutes.Heat your grill to high or prepare a direct-heat charcoal fire. Once the grill is hot, brush the planks with olive oil and place them on the cooking grate and heat until they begin to smoke. When the planks smoke, flip them over so the charred side is up and reduce the heat to medium, or move the planks for indirect cooking on a charcoal grill.Place the salmon on the plank skin side down and cook, with the grill covered to retain the smoke, until done, 5-7 minutes or until it flakes with a fork. Transfer to a plate and serve immediately.Serves six to nine.Nutrition values per serving: 303 calories, 18 g fat (5 g saturated), 2 g carbohydrates, 0 fiber, 30 g protein, 107 mg cholesterol, 72 mg sodium.
