Breakfast Bundles

5 eggs 1/4 cup milk1 pound bulk, raw breakfast sausage 1/2 cup green onions, chopped1 cup sharp cheddar cheese, shreddedSalt and pepper to taste1 tube (16.3 ounces) flaky biscuit dough (8 biscuits) 1/4 cup all purpose flourIn a medium bowl, beat eggs with milk.In sauté pan cook sausage until done; drain off most fat. Add eggs and green onion. When eggs are soft-cooked remove from heat and let sit for 10 minutes. Add 1/2 cup of the cheddar cheese, salt, pepper and mix. Refrigerate overnight or until well chilled.Heat oven to 350 degrees.Lightly dust a work surface with some of the flour. Roll out each biscuit to 6 inches around. Use just enough flour to prevent the biscuit from sticking to the work surface and rolling pin. Divide egg-and-sausage mixture among the flattened biscuits and sprinkle with cheese. Fold all edges toward the center and pinch together. Place folded side down on ungreased sheet pan and bake 15 minutes or until golden brown.Serves eight.Chef's notes: You can stuff these bundles with whatever you like; one of my favorites for lunch is a turkey and cheese bundle with homemade soup.Chef Michael Grove, Crowne Plaza Chicago O'Hare, Rosemont
