Blintz Pancakes
4 eggs1 tablespoon white sugar1 cup plain yogurt2 tablespoons potato starch1 cup cottage cheese 1/4 cup rice bran 1/2 teaspoon salt 2/3 cup brown rice flourBeat eggs in medium bowl. Add sugar, yogurt, potato starch, cottage cheese, rice bran, salt and rice flour and mix well.Bake on greased griddle, flipping once. These are good plain or with butter.
