Mediterranean Tuna
4 tuna steaks, 1-inch thick (6 ounces each) 1/2 cup olive oil 1/2 medium yellow onion, diced1 large tomato, diced, or 1 cup canned, diced tomatoes, drained1 tablespoon minced garlic2 chopped anchovy fillets 1/4 cup pitted Greek olives2 tablespoons fresh cilantro, chopped2 tablespoons fresh basil, choppedSalt, pepper and Creole or Old Bay seasoning to tasteHeat grill to medium high.In a medium bowl, combine oil, onions, tomatoes, garlic, anchovies, olives, cilantro, basil, salt, pepper and seasoning. Set aside 20 minutes at room temperature to allow flavors to blend.Pat tuna steaks dry, season with salt, pepper and seasoning to taste. Cook on oiled grill about 3 minutes per side for medium. Top with tomato mixture.
