Queso Fundido (Cheese Fondue)

Queso Fundido
1 cup white wine ½ pound mozzarella cheese, grated ½ pound Monterey Jack, grated ½ pound queso cheese, grated 2 poblano pep-pers, roasted, peeled, seeded and finely chopped ¼ pound chorizo, cooked and crumbled 6 cloves roasted garlic, smashed to a paste Salt and freshly ground pepperBring the wine to a simmer in a double boiler. Add cheeses a few handfuls at a time and stir until melted. Add peppers, chorizo, garlic and salt and pepper and cook for 5 minutes.
