Ham Stuffed Celery
1/2 cup low-fat mayonnaise (2 fat grams per tablespoon)
1/2 cup minced fresh parsley (preferably, flat leaf)
1/4 cup yellow mustard
1 teaspoon Worcestershire sauce
1 teaspoon sherry or balsamic vinegar
1 pound thin-sliced ( 1/8-inch thick) cooked smoked ham
15 large celery ribs, strings removed
Fresh-ground back pepper, to taste
In a medium mixing bowl whisk together the mayonnaise, parsley, mustard, Worcestershire sauce and vinegar until combined. Set aside.
Cut the sliced ham into 1-inch squares, place in a food processor, pulse until finely chopped and stir into the mayonnaise mixture. Season with the pepper. Mound the ham mixture into the celery ribs.
Serves 15.
LeanNotes: The percentage of calories from fat seems high because the calories from, celery is so low. Ham can be prepared 1 day ahead and chilled, covered. Any leftover ham mixture makes a great sandwich or tomato filling.
