Pilau (Steamed Rice)
Pilau
1 tablespoon canola oil
1 medium yellow onion, sliced
1 bay leaf
1 cup basmati rice
1 3/4 cup chicken broth
1 cup frozen baby green peas
In a small sauce pan heat the oil and saute the onions until limp and golden.
Add bay leaf, then rice and cook until rice turns opaque. Add broth and bring to a boil, stir and lower heat. Cover tightly and cook for 20 minutes. Liquid should be totally absorbed. Add peas and stir rice thoroughly to separate grains.
Serves four.
Nutrition values per serving: 267 calories, 6 g fat, 48 g carbohydrates, 3 g fiber, 7 g protein, 2 mg cholesterol, 478 mg sodium.
