Mini-Pizzas

Mini-Pizzas
1 can (6 ounces) tomato paste
3 tablespoons water
1/2 teaspoon salt
1/2 teaspoon oregano
1 teaspoon dried minced onion
1/8 teaspoon pepper (half of a 1/4 teaspoon)
1 can (7.5 ounces) refrigerated biscuit dough
1/2 cup mozzarella cheese, grated
Optional toppings
Mushrooms, sliced
Green peppers, chopped
Broccoli, chopped
Onions, chopped
Black olives, chopped
Pepperoni, sliced

Wooden spoon
Measuring spoons
Cheese grater
Rolling pin
Cookie sheet
1. Preheat oven to 475 degrees.
2. To make the pizza sauce: In a small sauce pan, mix together the tomato paste, water, salt, oregano, dried minced onion and pepper. Warm 3 to 5 minutes on low heat. Stir with a wooden spoon.
3. With a cheese grater, grate the mozzarella cheese, being careful not to grate your fingers (or use 1/2 cup pre-grated cheese)
4. Separate the 10 pieces of biscuit dough. Flatten each piece of dough into a circle of about 1/4-inch thickness and about 3- to 4-inch diameter across, by either flattening with the heel of your hand or rolling dough using a lightly floured rolling pin. (Do not over handle the dough or the dough will become warm, sticky and difficult to shape.)
5. Lightly grease the cookie sheet with a small amount of shortening on a paper towel or spray lightly with a cooking spray. Place flattened biscuits on greased cookie sheet, careful to keep the shape enlarged.
6. Using the back of a wooden spoon, spread each biscuit with the sauce. Sprinkle the grated cheese evenly on all biscuits. If desired, sprinkle other toppings.
7. Bake 5-8 minutes or until crust in lightly golden brown and cheese melted to preference. Serve hot.
