Habanero Barbecue Baked Beans

5 strips bacon any flavor

3 cans (size) baked beans

2-3 tablespoons of bacon fat

½ medium green pepper, chopped

½ medium red pepper, chopped

1 cup barbecue sauce

¾ cup brown sugar

2 habanero peppers chopped

1 cup smoked pulled pork, chopped fine

Salt and pepper

Onion powder

Heat oven to 275 degrees.

Cook bacon in a skillet; tear bacon into small pieces. Retain grease.

Add beans to a large aluminum foil pan. Add all other ingredients, including bacon fat; stir well. Cover with foil and bake about 2½ hours until peppers are soft.

Remove from the oven and place under a pork shoulder or ribs in the smoker for 2 hours. This allows the beans to catch pork drippings and get a little smoke flavor. Don’t go over 2 hours or they can get too smoky. Season to taste with salt, pepper and onion powder. Serve warm.

Serves 12 to 15.

Cook’s note: In lieu of pulled pork, add more bacon.
