Rae Ann’s Cheesy Potatoes

6 medium potatoes

6 tablespoons margarine, divided

2 cups shredded sharp cheddar cheese

2 cups sour cream

1 large onion, chopped

1 teaspoon salt

¼ teaspoon pepper

In a large pot, boil the potatoes with skins on until cooked through, about 20 minutes. Chill; then peel and grate them in a large bowl.Heat oven to 350 degrees.In a sauce pan over low heat melt frac14; cup margarine and 2 cups grated cheese, stirring until almost melted. Remove from heat and blend with sour cream, onions, salt and pepper. Fold mixture into grated potatoes. Transfer mixture to a 9-by-13-inch baking dish. Top with 2 tablespoons margarine (or more to taste) and bake 45 minutes. The top should be nicely browned.Serves 12.
