Sunset Cookies
1 pound butter, room temperature

cup sugar
2 teaspoons vanilla
4½
cups all-purpose flour
Red sugar
With an electric mixer, cream butter; add sugar and blend thoroughly. Mix in vanilla. Slowly blend in flour until fully incorporated.
From dough into a log about 1½
-inches diameter. Roll log in red sugar, wrap in wax paper and refrigerate overnight.
Heat oven to 375 degrees. Cut dough into 1/4-inch slices and bake on ungreased cookie sheets 10 minutes or until set. Remove immediately to racks to cool.
Makes 12 dozen.
Cook's note: Recipe can be cut in half. For variety, divide dough into shorter logs and roll in different colors of sugars.
