John's Chicken in a Barrel

½

cup kosher salt

1 whole chicken, no more than 21/2-3 pounds, halved

Pappy's Choice seasoning (see note)

Granulated garlic powder

Heat grill or oven to 350 degrees. Fill stock pot with cold water, add salt. Soak chicken halves for 2 to 3 hours. Pat dry and coat well with Pappy's seasoning and garlic powder.

Place in barrel cooker, on grill or on rack in open roasting pan, and roast for about 1 hour and 15 minutes. Serve immediately or wrap in foil until ready to serve.
