Momma Chef's SB&J Sushi Rolls

2 slices of wheat bread

2 teaspoons creamy SunButter

2 teaspoon strawberry or grape jelly (pick your favorite)

Remove crusts from bread. Use a rolling pin to flatten two slices of bread.

Spread 1 teaspoon of SunButter to within ½-inch of edges. Top SunButter with 1 teaspoon of strawberry or grape jelly. Roll up each slice of bread into a tight spiral.

Refrigerate 15 minutes (optional)

Cut into 2-inch pieces and serve. Voilà! The perfect lunch or afternoon snack.

Makes 6 pieces of SB&J Sushi.

Notes: Of course, if your family does not have nut allergies, you can use any nut butter of your choosing; my kids' preference is the good standby, creamy peanut butter.

This is the perfect activity for your kids when you hear those dreaded words, “I'm BORRRRED” or “I'm HUNGRRRRY.” Just show them once how to flatten and roll the bread and they should be able to make this recipe on their own.
