Grilled Stuffed Jalapeños
6 jalapeños, stem on, halved lengthwise and seeded
3 slices ham, chopped (smoked pit ham recommended)
2 ounces cream cheese
3 tablespoons shredded mozzarella cheese
3 tablespoons shredded cheddar cheese
6 crackers, crushed (Ritz recommended)
2 tablespoons cilantro, chopped
Combine ham, cheeses, crackers and cilantro, blend well smashing with fork. Fill jalapeño boats with ham/cheese mixture. Place stuffed jalapeños on foil, on medium high covered grill. Cook until pepper bottoms are browned and ham/cheese stuffing is melted and slightly browned.
