Chocolate Chip Cookies
¾ cup brown sugar
¾ cup sugar
1 package (3 ounces) instant vanilla pudding mix
1 cup margarine
2 eggs
1 teaspoon vanilla extract
2¼ cups flour
2 teaspoons baking soda
12 ounces chocolate chips
Heat oven to 375 degrees. Line cookie sheets with parchment paper.
In the bowl of a stand mixer blend brown and white sugars, pudding mix and margarine in the mixer. Add eggs and vanilla and mix until combined. Add flour and baking soda to above and mix until well combined. Stir in chocolate chips.
Drop rounded tablespoons of dough onto prepared cookie sheets and bake 9 to 10 minutes (don’t overbake). Remove from oven and let set on cookie sheet 5 minutes before transferring to cooking rack.
Makes about 5 dozen.
