Baked Potato Casserole

4 pounds potatoes

5 cloves garlic

¼-½ cup butter

½-1 cup half and half

8 ounces cream cheese, room temperature

16 ounces sour cream

8-10 ounces cheddar or colby-jack cheese, shredded

Heat oven to 350 degrees.Peel and cube the potatoes. Add potatoes and garlic to a large pot filled with water and bring to a boil. Cook 20 minutes or until for tender. Drain.Transfer to a large bowl and mash with butter and half and half.In a medium bowl, stir cream cheese and sour cream until well combined.Spread half the mashed potatoes in a 9-by-13-inch baking dish. Top with half the sour cream mixture and half the cheese. Repeat.Bake, uncovered, about 30 minutes.Serves 12.
