Pork Chops Parmesan
4 boneless pork chops, 1/2 inch thick2 tablespoons flour2 tablespoons butter#189;cup parmesan cheese, grated#189; teaspoon salt#188; teaspoon pepper4 cups red potatoes, sliced thin1 large onion, sliced1 can (101/2 ounces) beef consomme#189; cup water1 tablespoon fresh lemon juiceTrim fat from chops; coat with flour and brown on both sides in butter, 2 to 3 minutes per side.In a small bowl, mix parmesan cheese, salt and pepper; then sprinkle 1/3 of the mixture over meat. Cover with potatoes and sprinkle with another 1/3 of cheese mixture. Cover with onions.In a medium bowl, combine consomme, water and lemon; pour over all. Sprinkle with remaining cheese mixture.Cover and simmer on top of stove for about 1 hour, basting occasionally, until meat and potatoes are tender.Serves four.
