Cheryl's Molded Sugar Cookies

1 cup butter (soften to room temperature)1#189; cups pure cane sugar 1 egg2 teaspoons all-natural vanilla extract2#190; cups flour (see note)1 teaspoon of salt (optional)Heat oven to 350 degrees. Coat cookie mold pans with vegetable spray.In a large bowl, beat butter and sugar with an electric mixer, until well blended. Then beat in egg and vanilla, mix well.In a separate bowl combine flour, and salt, then add the flour mixture to the butter mixture. Beat until well blended. After all the flour is mixed in I use my hands to push all the dough together, sometimes the flour mixture needs to be mixed with your bare hands, sometimes it's fun to get a little messy. Press dough into molds a little less than half full. Bake 9-10 minutes or until light brown only around the edges. Cool in the pan 5 minutes and then flip and cool, before decorating.Makes 3 dozen.Cook's note: If you want to roll and cut out the dough, use only 21/2 cups flour. Dust the work surface with flour, cut cookies and bake 9 to 10 minutes.
