Marinated Pork Tenderloin
1/2 cup soy sauce
¼
cup brown sugar
2 tablespoons vegetable oil
1 teaspoon ground ginger
½
teaspoon dry mustard
2 cloves garlic, minced
1½
pound pork tenderloin
Whisk together soy sauce, brown sugar, vegetable oil, ginger, mustard and garlic. Pour into resealable plastic bag. Remove fat from pork and place in bag, turning to coat all sides. Refrigerate several hours or overnight, turning meat several times.
Heat oven to 325 degrees. Place meat on rack in shallow pan and roast about 45 minutes or until meat reaches 150 degrees. Let rest 10 minutes; slice and serve.
Serves six.
