Beer-Battered Tilapia

Olive oil

¾

cup all-purpose flour, divided

cup beer

1 egg

teaspoons baking powder

4-6 tilapia fillets, halved lengthwise

Salt and pepper

Heat about 1/4 inch olive oil in skillet until hot.

In a shallow dish whisk together 1/2 cup flour, beer, egg and baking powder until well combined. Place remaining flour in another shallow dish.

Season fillet strips on both sides with salt and pepper. Dredge fish in flour on both sides, shake off excess. Coat well in beer batter and transfer to hot pan. Cook 2 to 3 minutes per side or until golden brown. Drain on paper towels before serving.

Serves four to six.
