Butterscotch Cookies
3 cups brown sugar
1 cup butter
3 eggs
1½
teaspoons baking soda
1½
teaspoons cream of tartar
¼
teaspoon salt
5 cups flour
2 teaspoons vanilla extract
In the bowl of a stand mixer or with an electric hand mixer, cream sugar and butter until well combined.
In separate bowl, beat eggs lightly and add to creamed mixture along with baking soda, cream of tartar, salt and flour; mix until combined. Beat in vanilla.
Form dough into 2 rolls, 12 inches long, 3 inches in diameter. Wrap in wax paper and chill overnight.
To bake: Heat oven to 350 degrees.
Slice dough into 1/4-inch rounds and place on ungreased cookie sheet. Bake 10-12 minutes.
Makes 4 dozen.
