Mashed Potato Surprise

4 pounds Yukon gold potatoes, peeled and quartered

Salt and pepper to taste

2 cups wholeor 2 percent milk

3 tablespoons unsalted butter

2 cloves garlic, finely chopped

¼ cup blue cheese, crumbled

¼ pound Swiss cheese, diced

¼ pound Canadian bacon, diced

1 teaspoon Dijon mustard

Cover potatoes with cold, salted water. Bring to boil, cook until tender, about 20 minutes. Drain well.

While potatoes boil, heat milk and butter and keep warm.

Heat oven to 350 degrees. Butter a 9-by-13-inch casserole dish.

With hand potato masher, break up potatoes, add warm milk mixture and garlic; mash. Add bue cheese, Swiss cheese, bacon and mustard; mix well. Scoop into prepared dish and bake until bubbly, about 20 minutes.

Turn oven to broil and brown top for 1 to 2 minutes, checking often.

Serves six to eight.
