Oatmeal Chocolate Chip Cookies

1/2 cup (1 stick) butter

½ cup (1 stick) margarine

1 cup brown sugar

1 cup sugar

2 eggs

1 teaspoon vanilla extract

1 ½ cups flour

1 teaspoon baking soda

½ teaspoon salt

3 cups quick-cooking oatmeal

2 cups chocolate chips

Heat oven to 350 degrees.

In a large bowl with an electric mixer (or with a stand mixer), beat butter and margarine until light; add sugars and beat until fluffy. Add eggs and vanilla, mix well.

In a separate bowl, combine flour, baking soda and salt; add to butter mixture and mix until just combined. Slowly add oatmeal, mixing only until ingredients are mixed. With a wooden spoon, stir in chocolate chips. Wrap dough and chill overnight.

To bake, form dough into 1-inch balls and place on greased cookie sheet. Bake about 14 minutes or just until set and lightly brown.

Makes three dozen.
