LeanTreat Soft Oatmeal Raisin Cookies

1 scant cup all-purpose flour 1/2 teaspoon salt1 teaspoon baking soda 1/2 cup plain nonfat yogurt1 tablespoon, prepared liquid Butter Buds, butter substitute (may be omitted) 1/2 cup, firmly packed, light brown sugar 1/2 cup granulated sugar2 large egg whites1 1/2 teaspoons vanilla extract1 cup raisins1 1/2 cups quick, rolled oatsVegetable oil sprayPlace oven rack in middle position and begin heating oven to 375 degrees.In a medium bowl, sift together the flour, salt and baking soda. Set aside.In the large bowl of an electric mixer, at medium speed, mix the yogurt, Butter Buds, brown sugar and granulated sugar together until combined, about 30-45 seconds. Add the egg whites and vanilla extract, mix for 10 seconds, until just combined. Add raisins and oatmeal, mix for 15 seconds. Add the sifted flour mixture, mixing at low speed until just moistened. Do not overmix.Drop by level tablespoons onto shiny, lightly sprayed cookie sheets. Bake 8 minutes. Remove cookies from sheet to a wire rack. Allow to cool completely. Store in air-tight container.Makes 3 dozen, 2-inch cookies.Nutrition values per cookie: 59 calories (4.6 percent from fat), 0.3 g fat (trace amount fat), 1.4 g protein, 13.5 g carbohydrate, 0.6 g fiber, trace amount cholesterol, 53 mg sodium.
