Santa Fe Salmon
4 tablespoons olive oil1 teaspoon coarse salt2 large onions, sliced2 large garlic cloves, sliced3 poblano chiles, seeded, sliced2 tablespoons cilantro, chopped4 tablespoons chili powder, divided 1/4 teaspoon dried crushed red pepper1 tablespoon water1 1/2 pounds salmon filets, skinned and cut crosswise into 4 equal pieces4 cups mashed potatoesHeat oven to 400 degrees.Heat oil and salt in heavy, large, ovenproof skillet over medium-high heat. Add onion, garlic, poblanos, cilantro, 2 tablespoons chili powder and crushed red pepper. Add water. Cover skillet and cook 10-15 minutes, stirring occasionally. Uncover and continue cooking until onion is tender and golden, stirring frequently, about 5-10 minutes. Transfer to small bowl, reserving oil in skillet.Rub salmon with remaining chilli powder. Season with salt and pepper. Increase heat to high and saute filets, rounded side down, 4 to 5 minutes. Carefully turn over and place in oven for 4 to 5 minutes or until cooked through.
