Key Lime ParfaitCrust
1 1/2 pounds graham cracker crumbs1 tablespoon powdered sugar1 tablespoon cinnamon 1/2 pound butterFilling4 1/2 ounces cream cheese7 ounces sweetened condensed milk2 1/2 ounces Key lime juiceFor the crust: Heat oven to 300 degrees.Melt butter and mix well with sugar, cinnamon and crumbs. Layer on sheet pan and bake for 15 minutes. Cool and break into pieces.For the filling: With an electric mixer, beat the cream cheese on low speed until smooth. Slowly add the condensed milk and continue, scraping down the sides. Mix for 2 minutes on low speed after all the condensed milk has been added. Slowly add the key lime juice and scrape the sides well.To serve: Layer in a glass with graham pieces. Chill and garnish with lime zest.Serves 10.Chef Josh Humphrey, Sam and Harry's, Schaumburg
