"Apple Pie" Sweet Potatoes
1 can (40 ounces) cut sweet potatoes in syrup1 cup thawed apple-juice concentrate4 tablespoons butter1 tablespoon apple-pie spice blendDrain the sweet potatoes and place in the work bowl of a food processor.Place the apple-juice concentrate, butter and apple-pie spice blend in a 2-cup glass measuring cup and cover with a paper towel. Microwave on high until butter is melted, about 1 1/2 minutes.
