Get Your Motor Runnin' Fruit and Bran Muffins
1/4 cup drained unsweetened applesauce (from 1/2 cup undrained)2 cups unbleached, all-purpose flour 1/2 cup granulated sugar2 tablespoons baking powder 1/2 teaspoon salt1 tablespoon cinnamon2 cups bran flakes cereal1 large egg1 large egg white 1/4 cup canola oil1 1/2 cups 1 percent milk1 Gala apple, cored and chopped just before use 1/2 cup chopped dried apricots 1/3 cup seedless or golden raisins Place a wire mesh strainer over a bowl deep enough to keep strainer's bottom from touching the bottom of the bowl. Add 1/2 cup applesauce and let drain for 15 minutes.While applesauce drains, place oven rack in lower-middle position and heat to 375 degrees. Lightly spray 18, 1/3-cup (standard size) muffin cups with vegetable oil. Set aside.Add milk and bran flakes to a large mixing bowl and let stand for 5 minutes.In another bowl, whisk flour, sugar, baking powder, salt and cinnamon until combined. Set aside.Add eggs, oil and 1/4 cup drained applesauce to bran mixture and stir until well combined. Add flour mixture and stir until just combined.Chop apple, apricots and raisins and stir into batter. Divide batter equally among muffin tins and bake 18-20 minutes, or until a toothpick inserted into a muffin's center comes out clean.
