Minta Restaurant succeeds E + O in Mount Prospect

Following a soft opening last Saturday, Minta Restaurant and Social Lounge will hold its grand opening at 4 p.m. Friday, on the former site of E + O Food and Drink in Randhurst Village in Mount Prospect.

New owner Andrian Gaina said that while several of the most popular menu items from E + O will remain, Minta will have a more specifically Eastern European influence. He believes this will be a hit in the area, especially among the Eastern European population.

While this is Gaina's first foray into the restaurant business, he said his love of food took him there from the trucking industry. He said he found a mentor in the former owner of E + O, who will remain a partner in the new venture.

E + O closed in January after six years in operation at 125 Randhurst Village Dr.

Gaina said the soft opening last weekend has been achieving its intended purpose of preparing for Friday's much more publicized opening.

"It's getting busier and busier," Gaina said. "We're trying every day to be better than the day before."

The 4 p.m. daily openings that have gone on this week will probably continue for another month before Minta begins serving lunch as well, he said.
