Mexican family restaurant replacing taqueria at Randhurst Village

Randhurst village is getting a new restaurant next to the AMC theaters.

Salsa Street Fiesta Grill plans to occupy the space formerly held by Truco Taqueria at 211 Randhurst Village Drive in Mount Prospect. The village granted the restaurant a liquor license at Wednesday's board meeting.

Owner Beto Huerta said the first location opened in Sleepy Hollow four years ago. Following upon that success, Fiesta Grill opened in Chicago and then another location in Palatine.

"We believe in the family atmosphere of the restaurant," said Huerta, who spent several years with TGI Fridays.

He said the menu will have deep Mexican roots, offering traditional recipes with a twist.

"We want a new generation to get to know what Mexican food is all about," he said.

He said the drinks will be shaken by hand, not machine drinks that "taste like medicine."

He said he is hoping to open between Dec. 1 and 15, which will allow the restaurant to take advantage of the Christmas shopping and seasonal films.

"That is a great location, and people will be very excited when you open," Trustee Colleen Saccotelli said.

Huerta agreed.

"To be honest with you," he said, "this place should be booming with employment for the Mount Prospect community."
