Meat pie gets 'desperate' makeover

Meat pies date back to the Middle Ages, and many cultures embrace them. Whether they're called a Cornish pasty, empanada or spanakopita, they're easy to make and fun to eat.

Today's recipe for Spicy Beef Empanadas gets a “desperate” makeover, since we've used refrigerated piecrust dough to wrap up a savory, delicious roast-beef filling. No matter what filling you choose, meat pies (or vegetarian pies) are a hearty and fun way to serve lunch or dinner.

You can get creative with your fillings and even the “wrapper,” but we love the ease of rolling out the piecrust dough and the flaky results that it produces.
