Atwater's, the inn's fine dining restaurant and lobby lounge is under a reinvention of its own with welcoming back Kevin Gillespie as executive chef.

Chef Gillespie was the hotel's banquet chef more than 10 years ago and is thrilled to be joining the hotel again now overseeing all the culinary operation.

He is applying his 25 years of culinary experience and his principles to his new restaurant menu as well as every banquet event. He strives to bring current trends coupled with the classics into his menu and sourcing local products. From his dry aged beef to the no chemical poultry and wild caught seafood he brings seasonally fresh ingredients to the table.

He says, "I've grown up here and lived her for 35 years and I have had the opportunity to cultivate many great relationships with local farmers and business owners. I work closely with my dedicated staff of culinary professionals to create unique dishes that reflect the season."

Gillespie works attentively to offer gluten free options as well as working with his customers and groups dietary needs.

"I am very passionate about serving healthy food and locally sourced ingredients and I feel that it is the only way to truly appreciate good food," he said.
